Pumpkin Spice Muffins (Grain-Free)

This is a delicious recipe off the Detoxinista website! We even substituted apple sauce and baking powder for the eggs! This was healthy, vegan, gf, and oh so yummy! I love nights with my lovely community group girls. Maybe some day I’ll tell more about them…

Vegan Mac&Cheese

One way that I love to express myself is through baking and cooking! Not to mention, my best friend is Gluten and Dairy Free so the challenge is even greater, but I’m always up for adventure! This seems like just the right fit! Comfort food. Comfort food can go so far. It’s perfect for a cold and rainy or snowy Boone day or for a day that couldn’t have gone worse.  I love being creative and loving other people through food. What an added blessing in life to enjoy!

Wow, do I relate to this right now. I just saw this quote on one of my class sites and it hits home. It’s one of those moments that you realize you need to stop. Where are we racing to? Why are we rushing? Life doesn’t have to be a horserace; life is meant to be enjoyed. Life is a gift, why treat it like a burden?

One more.

One more thing to do. We get frustrated in the day to day because we have so much to do. Yet, while this is the case, we love to be busy. We schedule our lives because we want to do everything and we don’t want to miss out on anything. As I was moping in the fact that I never stop, my roommate blew my mind and rocked my world when she remarked on how she enjoys to be busy. Wow, while I complain. I enjoy going to and from. I love being here, there, and everywhere all of the time. Now, that being said, there are negative aspects to a constant running. When the still moments do come, how often are we truly able to sit and be still? Well, tonight, I am going to sit and be still. Tomorrow I will finish my homework and finish studying for my exam. Today, I will rest. I will sit for thirty minutes and be still. Then, after thirty minutes, I will drift off into a deep sleep, or I hope I will at least. Therefore, tomorrow, I will wake up fully rested, vivacious, and excited to celebrate life!
